desperate and hopeless
Just so we are working of the same page. These are the FSM diagnostics for the Knock sensor. Can you confirm that you have gone through them? EF-EC 132.pdf EF-EC 179.pdf The knock sensor also has a sub harness. Only one signal wire is connected to the sensor (see EF-EC 132) , the second wire is for the earth shield. Oil pressure
These are the figures from the FSM. Low oil pressure reading (on the dash gauge) when mid rpm is typically the oil pressure sensor/switch failing (assuming the oil level on the dipstick is correct).

My apologies, I do have the Installation guide for the Nissan remote door locking system kit (H0560-40P00) specific for the Z32. It is in Japanese though. Thanks for the info. I have ConZult happily running on a Win7 Professional 64bit laptop. I was contemplating upgrading to Win10 64bit at some point, but will leave things as they are.

Central Locking Issue
H0561-35F00 (KH0511 in diagram below) is part of the Nissan remote door locking system kit (H0560-64J27) offered in the JDM market an option. http://jp-carparts.com/nissan/partlist.php?maker=nissan&type=69&cartype=6&fig=H05 I don't have the Japanese circuit diagram, but the parts diagram shows the key parts and wiring. And yes, scotchloks were supplied in the kit!

Insurance

Have you got a multimeter for reading resistance? In the meantime, check the sensor harness in the wheel well for signs of damage. BR-25.pdf The whole thing looks like this:

Tailgate Brown plug thing
It's a 2.2uF capacitor, part of the rear wiper circuit (see red circle below). For the 3rd brake light, you will need to run a +12v supply from the rear o/s brake lamp back up to the tailgate hinge through the rubber concertina for the existing wiring harness and down to the 3rd brake light. You can earth the lamp on the rear wiper motor earth.

splash guards
The underbody (engine/radiator) trays at the front of the car do have an important function in getting the engine (and turbos) heat out and away from what is a hot running engine. This page is from the Road and Track guide to the 300ZX and provides more information.

I was going to suggest https://www.allcarpartsfast.co.uk/ which many of us have used. But I see they have a stop on Nissan parts at the moment dute to CV19. If you can't source in the UK see if CZP in the states can ship to the UK (again used by many on here). Normally orders get over here in a few days, but CV19 may affect that.
