Stock bolts and stock oem headgaskets will be fine with that power, dont use any cornflakes packet gaskets as it will prolly let go eventually. You can re use the old headbolts too.

stalling problem
sounds like your ficd valve has a bad connection, its at the back of the engine on the passenger side, look for a yellow plug at the rear, the ficd is below it,should have a pale blue plug on it,clean the connections, will be quite tricky i will warn you.whats your cars idle speed once warm?

ahh bugger - plus what to delete
Youll need a helicoil kit if the thread gets damaged,e bay sell them,m8 x 1,25 will sort it.as long as you get the studs out you should be able to fix the threads as long as you dont go past 6.8mm on the drill bits youll have the correct amount of metal left to recut a new thread with a tap.You must use a good drill bit and make sure its centered and well lubed whilst your drilling.dont use too much pressure as youll overheat the tip and blunt it.Do you have a B & Q near you ? iirc they sell m8 bolts and stuff like that.M8 X 1.25 X 30MM will be good replacements.
