Vacuum lines with limiters/jets...
The ones on the left are stock.They are fitted in the wastegate lines from new.The mig tips are extras.

More Engine Trouble....
THe high reading will be because you never released the pressure from the last cylinder test i should imagine.Put a teaspoon of oil in the low cylinders and see if it rises.If it does your pretty much assured its the rings/piston.Id say its highly unlikely with what you,d described its head gasket.

Your doing it right Si,Start large and work down,much safer that way.Some peeps maybe running .8 tips but they may have boost leaks they are not aware of and need to run the small size to compensate for pressure losses.

Is yours eating back tyres Jeff on the inside edges,Parts manager got one brand new at work and he drives like a vicar but the rears run a lot of negative camber and it nailed the first set in 8000 miles!!

Anyone know why this isn't plugged in?
Why will the cat have gone because the o2 sensor was unplugged?,as you say the default for not reading the sensor will be rich but it wont be enough to damage the catalyst.

Engine swaps, what would be interesting in a 300?
how about a nissan titan 5.6 v8 conversion and maybe throw in a turbo conversion for good measure.The engines got 375 pounds of torque to begin with!!

Boost leaks
In your case Joel id imagine the wastegates would open and youd have a huge leak into the exhaust.Your only running stock boost on those tubbies ya tight wad.get some 555s and let them spool more :D

Thrust bearing.....
The 300 has a spigot bush that has no bearings so it cant make a whirring noise.

Is this a good deal?
I would make no assumptions on whats gone and buy the car with a view in mind to having a replacement engine.Thats worse case scenario at least if it turns out to be something else its a bonus.Even if it only smokes on idle and has all the symptoms of failed tubs assume the engines fubar and budget for it.Nice looking car but still try and knock him down if you can.

By the sounds of it is more probable one of your turbo water feeds has sprung a leak.Worth checking before wading in with the headgasket diagnosis.

Mines ECU on E-bay
From what ive been told by a leading authority on this subject Mines ecu,s are mapped for 104 octane fuel and very often have aggressive timing maps to suit.more power can be obtained with a higher degree of advance in the timing but after a point it can cause detonation and thats where the problems start.
