This is not a definitive answer as I've not personally tested it, but I believe that W7 can run any specific application in an XP emulation mode, so anything that worked under XP, can be expected to work under W7.

555 injectors that are not
On a 'standard' tune chip it is a simple matter to alter for any size of injector, although ideally for performance and safety fine tuning would be required.

The cat sensors only register temp and trigger the warning light. To the best of my knowledge they are not connected directly to the ECU.

The Lamda (or O2) sensors are much further up the exhaust, so no problem there. The cat temp sensors can be unscrewed and pushed back up the holes under the carpet. I blanked the holes up with rubber grommet type things.
