Mate if you replace the pistons and rings your obviously have to fit new bearings and for the price of a set of complete engine gaskets then id say yes do them all, you can buy a kit with all the gaskets you need including valve stems, hg's, plenum gaskets, throttle body gaskets etc etc.

Already visited youtube, was a bit pants the first one, i hope the next few make up for it.

oh the valve seal. doh, nope you wont really be able to tell from a compression test :(
