What's it called and what does it do?

Not the yellow/brown coolant temperature sensor but the slightly smaller black one next to it (on the water pipes/front of the engine)

 

*mines brittle as arse and has come apart but figured before I re-solder/replace it, I should ask if it actually does anything important

 

any ideas?

theres two on there a injector style brown one, which is the ecu temp sensor and a black spade connector that is for the dash gauge.

It's all corroded inside but I reckon it'll be easy enough to repair

 

Just wrap plumbers PTF tape around the sensor thread before you fit...gives it a nice snug leak free fit:)
