how can i copy a blank jobsheet into my computer then be able to add text to it to fill it in, or alter the original text of the job sheet

You need a text reading program like Omnipage SE most scanners come with a program like this. The program reconises writen text and turns int into a pdf file that you can edit in word, you might get this program free on the net as its a give away bt cannon on their printer/scanners
