It can be done;) However the reason for changing the turbos with the engine out,Is to eliminate manifold problems.

IMHO I think the best wheel size for a Z is 18. 16" too small 17" 1 inch hardly worth the expense;) 18 SPOT ON! 19 a little on the hard ride side;)
