Is it possible to adjust the auto transmission on my 1990 300zx to get faster gear pick ups as it seems quite sluggish?

    No. It may benefit from an Autobox Oil and filter change though. You can also purchase a HKS ALC which is a electronic unit which increases the Autobox pressure to offer quicker gear changes.
