I have been looking to buy a sub and amp for the mini and am wondering most of the packages i see are 1200W subs but only come with a 600W amp......

How do you know if the amp is powerful enough for the sub???

the 1200w advertised will be peak power which isn't relevant, you want to be looking at rms watts, this will give you a better idea of how good the sub will be and how well the amp will be able to control it, a 600w 2 channel amp will work fine with a 500w rms sub as long as it is boxed up to the correct volume (check instructions with sub) and that the amp wiring kit can supply the amp with enough power from the battery, you really should be using 4 awg power and earth cable to get the best performance
