Ok so what does socketing do to an ECU?

When your ecu has been socketed the current EPROM (chip) has been removed and a socket (28pin DIL soctet IIRC) has been put in its place.

This enables the original chip (yeah right) or an upgraded chip such as JWT, SE, Unichip etc to be put in its place. The benefits of socteking is that chips can be swapped over very quickly.
