ill go for a boost gauge as an example.

a mechanical gauge has a vacuum pipe coming into the car and into the back of the gauge and it moves the needle mechanically.

An electrical gauge will have a pressure sensor somewhere in the engine bay and will just give an electrical signal to the gauge which will work my electromagnets or by a stepper motor.

Autometer gauges are good, MAC 1 has them

If you want a really accurate one get the blitz electrical ones, very expensive but good, iirc 300z has these.

You can probably fit them yourself too

As Clarkey said,

Electrical the needle is moved by an electrical curent from a sender unit which detects the temperature or pressure.

Mechanical the needle is moved by they acutal temperature or pressure of the water or oil. There will be a tube that carries the water or oil into the cockpit and into the back of the dial.
