I have 4x 18inch x 8.5 JJ rims all I want to use. What tyre sizes would make a good looking and practical enough setup on stock suspension without needing a back brace?

Was thinking 255 width all round or 245 on fronts?

What about depth? Suggestions? Any help appreciated.

Read somewhere that can give or take 10mm either way so 255 rear bit a good idea then?

I don't think you will have a problem going to 255/40 tyre on a 8.5J rim. The 245/40 is a guideline. It's worth bearing

in mind that from my experience the actual appearance of the tyre wall (the degree of stretch or bulge) for the same

tyre size when mounted on the same rim width varies between manufacturers.
