I start up my zed from cold in the mornings and it smokes blue ish from the exhaust for about 2 mins before stopping, i'm not saying smoke cloud level, but enough to see from inside the car through the rear view mirror.

Its a n\a with 72 thousand on the clock and i've always changed the oil every 2000 miles since i've had her, but the last oil change i put in vw audi's oil and not the usual castrol, could this have some effect on the valve stem seals etc ? :(

if its just from cold start, and at no other time, i would imagine valve stem seals, nothing to worry about in the short time but would need attention eventually

The VW/Audi oil is way too thin 0/30 if i remember correctly, i would reccommend castrol RS 10/60 or Mobil 1 Motorsport 15/50

You don't need to change oil that regularly. You are just wasting money.
