is there an easy way to adjust fueling? as i seem to be running seriously rich, getting black soot building up on back bumper, i know its better to be rich than lean but i just think it seems to be ripping the arse out of it seeing as im running such low boost, and more importantly its costing me a fortune in fuel!

Short answer- no.

Fuelling is all carefully controlled by the ECU.

Obvious candidates are MAF, O2 sensors and timing (I only put the last one coz that was my problem).

Worst case, your injectors are buggered (I'd say highly unlikely! :) ).

Stick it on a conzult and it should give you an indication.
