Temp Gauge going nuts?

Alright I was told to check the water level and the wiring for the senser for the sender to the gauge. I know how to do the water/coolant right?? I do not know were the wiring is or the sender or whatever I am supposed to check?

The gauge goes up and down rapidly especially when I put on the gas. I will check this as soon as I know were that is at. Thanks, Jordan
