There is a minimum thickness that they need to be- I can't remember off the top of my head, but it's in the Factory Service Manual/Owner's Manual.

Nothing particularly difficult about changing out the calipers. To remove the brake hardline that connects to the back of the caliper be sure to use a 10mm flare nut wrench. It will prevent you from rounding the nut. Also, make sure you support the caliper as you remove the hardline- don't want to go breaking that hardline. Definitely beneficial to have a helper. Also, be sure to put the L caliper on the L side and vice versa. It's a common mistake- just make sure the bleeder screw is on the TOP of the caliper. Be sure to bleed the brakes well, going in the order the FSM specifies.

Might also consider replacing the hardware kit (shims, etc), and applying some disc brake quieting compound to prevent squealing.
