On the series two onwards, the steering wheel was given the option of an air-bag, so does this mean that the same, updated, wheel was also available without an air-bag, or did they revert back to the old series one version? (if you see what I mean?)

mines a series2 UK car and it has the standard 3 spoke wheel.

yes, non-airbag series 2 have same 3 spoke wheel as series 1. The airbag selected option was very rare on series 2's.
