it supports the meat when it shrinks in the baking process. otherwise you would have a pastry pie with a rattly ball of meat inside. This feature was added to the recipe during the latter part of the 18th Century, when stock was used to fill up any airholes created during the baking process, extending the shelf-life of the pie whilst retaining the succulence of its nectareous cargo.

Pork pies...yuk....infact, anything made by ginsters. Tastes so cheap. I'm a pasty fan, but Ginster's are vile.

who said they were ginsters??

....no one, just whenever I think of pork pies, I think of Ginsters.

ginsters used to be nice. just cost cutting on ingredients causes loss of flavor.

i thankfully say i dont make tooling for ginsters

Narrrrr, ginsters pastys have always been pretty rough tasting.

Best pasties I think I've ever had are from our local bakery. 'Burns the Bread'.
