Test a thermostat?

I am right thinking that to test a themostat, that you put it in hot water and watch it open?

 

I thought my old one wasnt opening enough so bought a new one from nissan to be one the "safe" side.

 

So i put the new one and the old one in hot water to see if the new one opened more......

 

.....but the new one didnt open at all:confused:

 

I think that it must be a duff new thermostat, am i right?
