Looking at picking up a 300zx jdm 2+2 which has cloth fitted in the light grey colour if I was swapping out the seats for leather would the factory car still have the same grey material around the doors and dash board if it was leather fitted from factory.

Or is there different trims colour combo's?

Yes, leather seats still have either tweed or suede on the dash and door cards. Colour is usually grey but there were other colours too but rare.
