Questions about 18" wheels

Not just yet but am starting to look at wheels again. Tempted by Rota GTR-D's.

 

A few questions;

 

what width can you get away with at the front and back without the risk of the tyres/wheels catching.

 

What offset? I am wanting a big dish at the back, I assume the lower the offset the bigger the dish?

    Are you happy with how yours sits? Are the wheels under the arches or flush with them? Any issues with rubbing? How low is yours compared to stock?
