silver surfers recipie thread (and my perfect roastie)

mentioned doing a recipie thread on silver surfers new job thread the other day so here it is, lets put some recipie and cooking ideas in here

 

this is how i do my roast potatos for me chrimbo dinnner

 

peel my tattys, and cut them in half (small tattys only) i use maris pipers

 

have some water with black pepper and a bit sea salt boiling

 

put the potatoes in there for about ten mins (or till you can just say poke a sharp knife through them with ease)

 

once boiled i pour them into a sieve and drain the water off

 

toss them about in the sieve to fluff them up

 

once fluffed up i di them in a bowl of olive oil with black pepper and mix herbs in making sure they are all covered in oil

 

then put them on a baking tray and put them in a pre heated oven (bout 190 elec fan assisted) for about 35 mins turning them half way through

 

thats how i do me roasties, nice and crispy on the outside and nice and soft on the inside with a nice pepery mix herb taste lol

Ok perfect chocolate mousse, one of my favourites.....

Start with 800g good dark cooking choc, melt in a glass bowl over a pan of boiling water,

Then crack 6 large eggs and separate whites and yolks, whisk whites till stiff and set aside, add egg yolks to chocolate and mix in, off the heat, (it will thicken) then gently fold in the whites to the chocolate till its all one colour, put in glasses or bowls and stick in the fridge....job done,

You can add baileys or brandy with the yolks to change the flavour...enjoy :-)

Mine are pretty much the same but;

 

Maris pipers par boiled in salted water for about 7mins( I try to get whole small ones all the same size and once peeled and in the pan, run water through them to remove the starch)

 

After 7 mins, empty all water out of pan but leave spuds in. Give them a good glug of Virgin olive oil and some rock salt then put the lid on the pan and give it a a few gentle shakes.

 

Tip the spuds into a pre heated roasting tin that has a decent amount of beef dripping in it.

 

Roast for about 30 mins at 200c (fan)

I follow the hairy bikers recipe and mix semolina with the potatoes and roast them in goose fat, perfect.

Aunt Bessies roast potatoes. 30 minutes in the oven. Job done :clown:
