how do you do yours, ive been making home made chips lately and they are much better than oven chips, but not as nice as chip shop chips

 

so how do you make yours?

blanch then 1st in hot water. makes the starch come out to the top which makes them go crispy.

get yourself an ActiFry, makes lovely chips using light olive oil ;)

My aunt (by marriage) her parents had a chippy in London and they swore the perfect chip was twice cooked - so deep fried til cooked but not browned, lifted out to drain then put back in to crisp up I believe...

I believe that's how the Belgians cook theirs. The best chips I ever had were on a weekend break in Brugge a few years back. A grilled fresh lobster, small salad and a bowl of Belgian chips with a little mayo; washed down with a bottle or 3 of Brugge Blonde or Leffe lager.....

The best home made chips are always when your mother does them, i dont know why, ive tried to recreate it, come close, but never quite the same lol

i boil some salted and peppered water, cut the chips quite large and throw them in for about ten mins, get an oven tray and pour a bit of olive oil over the bottom (not to drown them just stop them sticking), get it to a temp of around 180, dry the chips and place them in the oil, black pepper and salt them again pour a small amount of olive oil over them and them put them in the oven for about 45 mins turning once

 

they are quite nice but just not crispy chip shop chips lol

 

i dont want to put them in a deep fat fryer and im not sure my benches could handle another gadget on them vijay lol

+1. And the oil's good for you. Guilt-free chips! I eat them about 4 times a week.

+1. And if you let them coll down and dry off and then put them in the freezer for a day or two, they get even better still (if you're deep frying them, wouldn't recommend frozen chips in an Actifry).

my mrs does some fancy chips there amazing. you dont even have to cut them. just geta tea towl put said tato in it, beat it once ot twice so it breaks into little bits about an inch or so square. the put into hot oil till brown and crispy. yummmmmmm

I have some lovely Home Made chips, not sure on the process as they tend to appear

sort of like Magic while I am watching TV. But the are Perfick
