I would ask the "mechanic" to clean out the Oil Sending Unit and make real sure he has not crossed up the injector wiring by doing a balance test. If you had the oil pressure before , no reason for it to die on you. It is real easy to cross the 3 and 4 injector feeds from the wiring harness.

The ECU is probably trying to relearn. It may take 3-4 times before it gets over not having any power for a week or so.

The Poly Nuts can be a PITA , did not know you were using that type.

The rocker arm issue is not unusual for rebuilt heads on a fresh motor Nick. Google Summit Racing and get yourself a set of "jamb" or the new pinch type nuts. .60 overbore , stroked , 10.5 compression , mild cam Nick? That 320hp at the crank seems a little low. I was expecting you to turn around 360 at the wheels easily. The 420tq seems right on with your build. Still got to be a lot of fun tho.
